Lemon Zaatar Chicken and Potatoes
How to make zaatar spiced roasted chicken and potatoes (Delicious!). I call it Habibi Chicken.
Ingredients
~4 pounds (or 1.8kg) of chicken in pieces (you can carve a whole chicken or use legs, thighs, breasts, drumsticks)
1.5-2 lbs (or 680-900g) potatoes. I used Russet potatoes and cut into 1/8ths.
1/2 cup (or 118 mL) of fresh squeed lemon juice
1/2 cup (or 118mL) of olive oil
2 tablespoons of zaatar
1/2 teaspoon of paprika
1 tablespoon of salt
1 teaspoon of pepper
4 cloves of garlic, crushed
1/4-1/2 cup (118mL) of water or stock
Directions
Turn on oven to 400F (200C)
Make the marinade first whisking together the olive oil, lemon juice, garlic, zaatar, and paprika.
Throw chicken and potatoes into a roasting pan and add in the marinade.
Mix chicken and potatoes real good with marinade
Add in water/stock and bake for 45-50 mins until golden brown and delicious. You can check how things are going at about 30 minutes in. I like to flip the chicken and potatoes around in the sauce to get nice and juicy.
Plate the potatoes and chicken and pour on some of the remaining juice.
Serves 4-6 people
Notes
You can accompany this chicken and potato dish with a simple tomato and yogurt salad
You can throw the remaining liquid after baking into a small pot and reduce down by about half to get a lemony-zaatar gravy. Only do this if you have time.
