Ingredients
1 large bunch of parsley, coarsely chopped
Zest of 1 lemon, finely chopped
Zest of 1 orange, finely chopped
2 garlic cloves, mashed into a paste with salt
2 tbsp of capers, finely chopped
2-3 scallions, finely cut
Directions
Add all ingredients into a bowl and mix
Notes
Salt a chicken and add the gremolata mix to the inside of outside of the bird
Stuff a whole fish with the gremolata and bake
Use as a condiment for osso bucco
