I find it funny what influential people eat. I want to recreate their meals for you. I don’t have any political agendas with this recipe.
Ingredients
1 NY Strip (<1 lb)
Salt and pepper
1 tbsp butter
1 garlic clove
Half a lemon
Sir Kensington Ketchup
Directions
I’m following a reverse sear technique
Pat dry steak
Salt and pepper both sides and place on a wire rack with a sheet pan underneath
Turn oven to 250F and place steak in oven. It took about 1 hr and 15 mins to get to the right temperature (my oven sucks). The temp for well-done is about 163F. So you want the steak in the oven to about 150F before taking out.
Place steak into ripping hot cast-iron pan, fat-side down. Sear for 1 minute.
Sear on one side for 1-2 minutes
Flip and add in butter, garlic and lemon juice. (Don’t be afraid of the fire)
Baste on this side for another 1-2 minutes more
Let the steak rest for 4 minutes and then serve alongside some ketchup
