Eat Like President Biden: Chicken Parmesan
This is a short series on foods that influential people eat.
Ingredients
2 large boneless, skinless chicken breasts
salt and freshly ground black pepper to taste
1/2 cup flour
1 beaten egg
3/4 cup plain bread crumbs (I’m using Panko cause that’s what I got)
1/2 inch of oil for frying
1 cup of fresh mozzarella
1/2 teaspoon olive oil
2 tablespoons Parmigiano-Reggiano
Directions
Turn oven on to 450F
Pound your chicken breasts between two pieces of plastic until its as thin as the thinnest end of the breast
Salt and pepper both sides
Add flour to all sides
Coat in egg wash
Coat in bread crumbs
Fry in oil for 2-3 mins per side until GBD (Golden Brown and Delicious)
Add to a foil lined baking sheet
Top chicken with the fresh mozzarella and Parmigiano-Reggiano and a dash of olive oil
Place into oven and cook for 10-12 minutes until cheese has fully melted
Plate with a ring of sauce around the outside of a plate and place chicken in the middle
Notes
After the breadcrumbs step, you can pop in the fridge and cook later
You can see if your oil is hot enough by putting the back of a wooden spoon (or a chopstick) in the oil and if it sizzles, you’re good to go
