I was the rocket launcher.
Little Branzino was an astronaut.
The local park swing was our space ship. 🚀 We had a blast.
As soon as we finished playing, we were peckish.
I had 15 minutes to make family dinner.
Everyday is a theme in the Mister Branzino household.
Sunday is Meal Prep Sunday (like above) where I batch cook simple meals in around an hour. Thankfully, I had roast chicken thighs and potatoes to work with.
The purpose of batch cooking is to remix leftovers into simple, fast and delicious meals throughout the week.
Back to dinner time.
Mondays are Salad Bowl Mondays. I like salad-based meals on Mondays to replenish from the weekend.
I cranked out a fresh Greek Salad in 10 minutes, heated up and sliced the chicken and threw in the potatoes to make a simple salad.
The final product:
Not bad, right?
